Some friends over at flickr seemed to like these pictures of last nights dinner so thought I would share it here as well. This savory zucchini cheesecake was light and delicious and summery.
I found the recipe at 101cookbooks.com, and had been looking for an interesting way to use some fresh ricotta/farmer's cheese that we brought back from our visit to Amish country.
Heidi Swanson (from 101 cookbooks) also has book tempting me at the moment, but I've promised myself I would try something from my other recent cookbook acquisitions before purchasing another.
It's a weakness. I know.
