This video lecture, by British author/baker, Andrew Whitley, came to my attention through Jill, of Grey Cottage Studio. I've watched it several times, both for reasons of having been interrupted and just to listen once again to some of his points.
Mr. Whitley discusses critical issues facing the commercial bread industry -- specifically in reference to Great Britain -- however, it's safe to say those concerns would apply to the United States as well. His talk is focused on how these issues effect consumers by providing a nutritional deficit, and what we might do to improve our situation by [paraphrasing] "taking bread baking (literally) back into our own hands and our own communities."
